Chicken (or Turkey) Dumplings

What could be more delicious the steaming chicken (or turkey) dumplings?  These fluffy dumplings are filling and provide a sense of contentedness and well-being on cold winter days.

Cut cooked chicken of turkey into bite-size pieces.

Saute 1 medium sliced and chopped onion in 2 tablespoons of butter.

In medium sauce pan-melt two tablespoons butter.  Whisk in 2 tablespoons of flour.  Slowly add 1 cup milk and one cup broth or (just use 2 cups of milk).  

Add parsley, salt and pepper to taste.  Sometimes I put in 1 teaspoon of poultry seasoning.  Stir until thickened.

Add 1 cup each of home-grown sugar peas, canned sliced carrots, and the sauteed onion.

 Dumplings

Stir together flour, baking powder, and salt in medium size bowl. I melt my butter and add to flour then stir until crumbly. Stir in milk to make a soft dough. Add parsley.

Drop by spoonfuls into nearly boiling or very hot Dutch oven pot of the creamed chicken and turkey. Cover and simmer 15 minutes without lifting lid.

Critical to have a tight fitting lid and not to open because the steam makes the dumplings fluffy.
