Chicken Knickerbocker the Cheesy Leftover Casserole

 

This is the perfect Dutch recipe to use left over turkey or chicken

 I have never had one complaint when serving this recipe.

 30 Minute Casserole

 

Leftover chicken or turkey de-boned

2 cups rice

1/2 cup sweet pickle relish

1 jar pimento’s (optional)

4 cups water or turkey or chicken broth

Salt to taste

 

 

4 cups shredded cheese (I use mozzarella and cheddar)

2 tablespoons butter

3 tablespoons flour

1 tablespoon oregano

1 teaspoon ground nutmeg

1 cup cold water

 

This is a 2-pot recipe

 

In a boiling pot combine water (or broth), turkey (or chicken), sweet relish, and pimentos and bring to boil.  Turn down heat and simmer until rice is done.

 

Meanwhile in a large frying pan melt butter.  Whisk in flour.  Add 1 cup of cold water slowly while whisking.  When thick and smooth add cheese and continue to stir.  When the cheese has melted, add nutmeg and oregano. 

 

To serve, put rice in a baking dish.  Pour the cheese sauce over the rice.  Serve right away.  This is not one of those dishes that can sit around or slowly baked.  It can be reheated but it is best fresh.
