Rose Petal Champagne

Rose Petal Champagne

Rose Petal Champagne is the finest of all champagnes. Rose Petal Champagne is an exquisite champagne with an aromatic blend of rose petals and lemon with lots of bubbles for any occasion!

Petals from wild or domestic roses work equally well. You can mix rose petals from different colors of roses or just use one color.

Makes 5 gallons

2 quarts rose petals fresh or dehydrated
4 gallons of water, you can use some rose water as water for additional flavor
12 pounds sugar
1- Champagne Yeast Packet, 1 oz.
5- Organic Lemons

• Place the rose petals in a five-gallon food-grade plastic or glass jug.
• Pour 3.5 gallons of boiling water over the rose petals.
• Put on fermentation lock.
• Leave for 2 days shaking the bottle each day just a little.
• Put 6-pounds of sugar in a quart of water, boil for about 2 minutes.
• Cool until lukewarm. No more than 100 degrees.
• Add to your fermenting container.
• Add Champagne yeast and let it ferment for 3 days.
• Then siphon the must minus the petals and sediment into another fermenting jug.
• Put on fermenting lock and let ferment for 10 days.
• Boil the other 6-pounds of sugar in quart of water for 2 minutes.
• Cool down to lukewarm, no more than 100 degrees.
• Add to fermenting jug.
• Add the juice of the organic lemons and grate lemon peel and add.
• Put on fermentation lock and ferment until fermentation has ceased. This can take 6 months. It is our experience that this is a slow fermenter.
• Rack into a sterilized jar.
• Leave until it clears.
• Then siphon into bottles, cap and label. Use a #9 cork for champagne corking
